New in Valladolid: Itamae Sushi Bar & Omakase on Calzada de los Frailes

A new Itamae Sushi Bar has opened on Valladolid’s Calzada de los Frailes, bringing sushi, ramen, sake cocktails and a six- or eight-course omakase experience to Barrio de Sisal. Here’s what travelers should know.

Updated September 12, 2026. If you’ve walked Calzada de los Frailes in Valladolid lately, there’s a new dinner option worth knowing about: Itamae Sushi Bar, a new Japanese restaurant in Barrio de Sisal with an omakase bar as its biggest point of difference.

This is not the older Itamae location on Calle 40. The new Sushi Bar opened in August on Calzada de los Frailes and is part of the same Valladolid restaurant group.

Why this opening caught my attention

Valladolid is one of those places where most travelers arrive expecting cochinita pibil, longaniza, sopa de lima and other Yucatecan classics. You absolutely should eat those things. But if you’re staying two or three nights, eventually you may want something completely different.

That’s where this new place gets interesting. Itamae Sushi Bar is offering sushi and ramen, but the real headline is its omakase experience.

What is the omakase?

Omakase basically means putting the meal in the chef’s hands. Instead of ordering one roll at a time, the chef builds a sequence for you. At the new Valladolid location, the opening menu was announced with six- and eight-course omakase options.

The restaurant is also pairing the experience with signature mixology and drinks made with sake. That makes this feel more like a dinner experience than a quick sushi stop.

Where is Itamae Sushi Bar?

The new restaurant is on Calzada de los Frailes in Barrio de Sisal, at Calle 41-A with 43-A. That location makes it especially easy to combine with an afternoon walk from Valladolid’s main square toward the former Convent of San Bernardino de Siena.

If you’re already planning to walk Calzada de los Frailes around sunset, this is the kind of place that can turn the walk into dinner instead of making you double back to the center.

The opening announcement listed hours of 3:00 PM to 11:00 PM, Monday through Sunday. Some current listings show a 3:30 PM opening, so I would check the same day if you’re planning an early dinner.

Is this the same Itamae that has been in Valladolid for years?

Same restaurant family, different concept and location.

The established Itamae Sushi remains on Calle 40 and has been serving Valladolid for years. The new Itamae Sushi Bar on Calzada de los Frailes is a separate location built around the bar, omakase and a more experience-driven dinner.

Would I put it on a one-day Valladolid itinerary?

Probably not if it’s your first and only meal in Valladolid. On a first visit, I’d still lean toward eating something distinctly Yucatecan.

But if you’re staying overnight—or especially for two or three nights—this makes much more sense. Have your regional lunch earlier in the day, walk Calzada de los Frailes in the late afternoon, and then try something completely different for dinner.

One important note

I’m treating this as a new-opening update, not a personal restaurant review. I haven’t sat through the new Calzada omakase yet, so I’m not going to tell you it’s amazing just because it’s new. What is interesting right now is the concept, the location, and the fact that Valladolid’s food scene continues to broaden beyond the dishes travelers already associate with the city.

Once the new location has more time behind it, we’ll update this with what travelers are consistently reporting and anything that changes with the menu, reservations or hours.

My simple Valladolid food plan

If I were building a two-night Valladolid stay right now, I’d keep one meal firmly Yucatecan and use the other dinner for something newer like this. That gives you both sides of Valladolid: the food traditions that make the city special and the newer places changing what an evening here can look like.
